Silver Needles
The rarest and most coveted white tea. Made exclusively from the first young buds of early spring, true Silver Needles is produced in very limited quantities each year. It yields a delicate, peachy cup with a buttery mouthfeel and a lightly floral aroma. Our current lot was harvested in late March 2024.
White Peony (Bai Mudan / Pai Mu Tan)
Harvested just after Silver Needles, this white tea includes both buds and young leaves. Our high-grade White Peony has an unusually large proportion of silvery buds, giving it a fuller body and deeper stone-fruit character than Silver Needles while retaining its signature freshness. Harvested in early April 2024.
Spring White (Shou Mei)
Made from more mature leaves and some stems, this style of white tea is ideal for everyday drinking and shines both hot and cold brewed. Spring White offers a richer, more robust version of the White Peony flavor profile—fruity, smooth, and satisfying with enough structure to pair well with food. Harvested in mid-April 2024.
Brewing Guidelines
White teas are best brewed at lower temperatures to extract their delicate flavors without introducing bitterness.
Silver Needles: 2 g (about 1 Tablespoon) / 180 °F (80 °C) / 5 - 6 minutes
White Peony: 2 g (about 1 Tablespoon) / 180 °F (80 °C) / 4 - 6 minutes
Spring White: 2 g (about 1.5 Tablespoons) / 180 °F (80 °C) / 3 - 5 minutes
